Rich Francis visits the Inuvialuit community of Inuvik, NWT, where he's eager to learn one of the more unique food sources harvested on Turtle Island- Canada's national animal- the Beaver! He will visit with Elder Big John Jerome, once an avid trapper and one of the only Elders in town who still prepares Beaver the traditional way. He will also visit with local trapper Doug Esagok, who still traps Beaver for its meat and pelts. He will join them for a meal of Beaver tail, the preferred cut of the Beaver's meat, and learn how this food source has complimented the Inuvialuit's diet throughout their centuries on the Delta. Doug will take Rich out to the estruaries of the MacKenzie River, to learn the process involved in trapping the Beaver, which requires a solid understanding of the animal's habits; and lots of patience. Big John and Doug will teach Rich about the history and relevance of Beaver to the Inuvialuit of the Beaufort Delta and the various ways this animal is harvested and prepared. With his culinary imagination sparked by the flavours found along the Delta, Rich brings his new learnings to the firepit, inspired to create some new and exciting Beaver dishes for everyone to enjoy, including the viewers at home.

Rich Francis visits the Inuvialuit community of Inuvik, NWT, where he's eager to learn one of the more unique food sources harvested on Turtle Island- Canada's national animal- the Beaver! He will visit with Elder Big John Jerome, once an avid trapper and one of the only Elders in town who still prepares Beaver the traditional way. He will also visit with local trapper Doug Esagok, who still traps Beaver for its meat and pelts. He will join them for a meal of Beaver tail, the preferred cut of the Beaver's meat, and learn how this food source has complimented the Inuvialuit's diet throughout their centuries on the Delta. Doug will take Rich out to the estruaries of the MacKenzie River, to learn the process involved in trapping the Beaver, which requires a solid understanding of the animal's habits; and lots of patience. Big John and Doug will teach Rich about the history and relevance of Beaver to the Inuvialuit of the Beaufort Delta and the various ways this animal is harvested and prepared. With his culinary imagination sparked by the flavours found along the Delta, Rich brings his new learnings to the firepit, inspired to create some new and exciting Beaver dishes for everyone to enjoy, including the viewers at home.

Jerry begins detailing the elk. With a #4 chisel-edge brush, works on highlights in the elk's eye, nose, and other facial areas and in some areas forming the suggestion of hair. Shadows areas are a result of the original underpainting and give the image its dimensional form. Then with #6 chisel edge move to highlights on the elk's body to see its form take more shape. Now with #6 chisel-edge brush, Jerry inserts weeds and illustrates importance of light and shadow. Then with #6 chisel-edge brush, tap color to add a grayish-blue, airy, lacey look coming through the reeds. Jerry switches to his #4 script brush to add tall, light colored weeds and pods ... pulling a heavier concentration of weeds around elk. Final highlights include spots on elk's back, and with that Jerry recommends the viewer add as much or as little detail as he/she prefers and add layering and glazing to bring the color of the elk's body up one or two levels.

Many people are familiar with Ansel Adams famous landscape photographs of Yosemite, but there is a whole other body of work that is rarely discussed. Huell visits the Los Angeles Public Library to see the "forgotten Los Angeles photographs" taken by Ansel in 1940 for a Fortune Magazine article on pre-war L.A. These photographs were later donated to the library by Ansel and are now in their collection. Huell is joined by Jonathan Spaulding, the Executive Director and Chief Curator of the Museum of the American West and Autry National Center, and author of "Ansel Adams and the American Landscape." They spend the day in downtown Los Angeles to visit many of the sites where the original photographs were taken.
