In Tokyo he operates a cooking school and is a prolific author, often appearing on television, in magazines and on the lecture circuit. In DINING WITH THE CHEF, Chef Saito takes us to the heart of Japanese cuisine by demonstrating culinary techniques, explaining ingredients, and showing how to arrange food to bring out its distinctive characteristics. Host Yu Hayami is an international singer and actress who was born in Japan and raised in Guam and Hawaii. Aside from her career and being a mother of two, she is also involved in charity work. Yu is a lover of good food, as well as a fine wine enthusiast.

Not one to pass up an opportunity to take on a new mountain bike trail, John visits Spicer's Ranch, a 900 acre mecca for mountain bike enthusiasts. From there, John visits the 7J Ranch, a local cattle ranch that doubles as conservation and education ranch. Not far from the ranch at the Big Dune recreation area, John witnesses the mating of the Giuliani Beetle. Once a year, in a three-week window, for 20 minutes, tens of thousands of the Giuliani Beetles emerge from beneath the sands to mate and then re-bury themselves until the next year. It's an amazing sight.
Mackinac Island was the setting for the cult 1979 film "Somewhere In Time," starring Christopher Reeve, Jane Seymour, and Christopher Plummer. This segment offers a 'Somewhere In Time' experience as well. June is Lilac Festival time on Mackinac Island. And our experience included the 18th Century experience of the iconic Grant hotel, complete with carriage lessons as we clip clopped past the painted Victorian mansions on the bluffs, through the dappled interior of the island and into the one of the Grandest Victorian era hotels in America. It is there because the San Andreas Fault is tearing southern California apart and the bottom is dropping out. Three hundred years ago, it was Lake Cahuilla, a freshwater lake, but changing geology, the whims of the Colorado River, and the negative side of extensive, industrial agriculture have resulted in a very salty and polluted sea. Once a booming tourist mecca, drought, agriculture, and failed development have produced a nearly dead body of water. All around the lake are fragments of broken dreams. One place, a most unusual one, continues to thrive.
