There's always food growing somewhere in America. That's part of the real miracle of nature. Fruits and veggies are in full swing in Florida in the coldest months of the year ? we start this episode in the Everglades in early February with our friends from L&M Farms. Then we roll up to Georgia in spring to visit Baker Farms, one of the largest growers of greens anywhere. Then we head for North Carolina in July to follow the crop as it continues marching north before starting all over again in Florida the next year.

Understanding what a plant needs helps us to preserve the green environment. Plants are solar powered and do their growing at night. Then chlorophyl turns sunlight into energy to keep our plants growing and give energy to us. Nick shows how celery absorbs water, and warns that we must all learn the conditions that plants need to grow. With his young visitors he plants wheat grass, provides the right environment, and watches the plants grow.

Nuts are fruit as well because they contain seeds. Certain fruits like banannas and oranges only grow in tropical fruits. There are even cannonball fruit, dragon fruit, chocolate pudding fruits, buddha's hand fruit and finger limes. Nick believes that citrus fruits are some of the healthiest fruits on earth. With his young friends, he shows how to make lemonade.

In this botanical garden, a microclimate has been created within the city, a huge greenhouse where no one has to worry about the weather. The potted plants thrive because we have controlled their growing conditions. When Nick grows a terrarium with his young guests, they begin to understand how climate can be controlled to create sub-tropical conditions.

She is the 1993 recipient of the Eliot Cades literary award, and is the author of Uluhaimalama, an anthology of her poetry. Her work has appeared in numerous publications. Her unique and accomplished voice is an important part of the development of indigenous literature in Hawai'i.
